REAL Southern Fried Chicken Batter

Ingredients:

  • 2 cups all-purpose flour
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper (optional)
  • 1 cup buttermilk
  • 1 egg
  • 1 tsp hot sauce (optional)
  • Vegetable oil for frying
  • 4-6 boneless, skinless chicken thighs or breasts

Directions:

  1. In a large bowl, mix together the flour, salt, pepper, paprika, garlic powder, and cayenne pepper (if using).
  2. In a separate bowl, whisk together the buttermilk, egg, and hot sauce (if using).
  3. Dip each chicken piece into the buttermilk mixture, making sure it is well coated. Then, coat it with the flour mixture, shaking off any excess.
  4. Heat about 1 inch of vegetable oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat. The oil should reach 350-375°F (175-190°C) on a thermometer.
  5. Carefully place the chicken pieces in the hot oil, making sure not to overcrowd the pan. Fry the chicken for 8-10 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the crust is golden brown.
  6. Remove the chicken from the oil and place it on a wire rack or paper towel-lined plate to drain off any excess oil.
  7. Let the chicken rest for 5 minutes before serving. It’s best to serve it hot with your favorite sides like mashed potatoes, coleslaw or macaroni and cheese.
