1 x packet Tennis biscuits
125g melted margarine
1 tin condensed milk
100ml lemon juice
grated rind of one lemon
250ml cream, whipped
1. Blitz the Tennis biscuits in a food processor and add the melted margarine. Blitz together until crumbly and press into a dish and place in refrigerator.
2. Thicken the condensed milk with the lemon juice by whisking together. Add the lemon rind.
3. Fold in the whipped cream and pour mixture onto the biscuit base and smooth out. Place back into the refrigerator to set slightly.
